Kids love cupcakes more than just about anything. With Easter just around the corner we were trying to come up with creative ways to give this classic dessert a fun little twist. And just look at what we came up with! These Easter Bunny Cupcakes are fun, delicious, and just so so easy to make! The kids are sure to be delighted. We are sure you will be sneaking a bite or two as well.

EASTER BUNNY CUPCAKES
1 teaspoon Vanilla extract
3/4 cup caster/superfine sugar
1 cup self-raising flour
Icing & Bunny Ears
Store bought vanilla icing spread
200g white chocolate
Makes 12 cupcakes. Double the mixture to fill one pack of Baking Cups.
Crack eggs into an 8oz/250ml measuring cup then fill to the top with thickened/whipping cream. Pour into a mixing bowl and beat with electric mixer for one minute. Add vanilla extract, caster/superfine sugar and sifted self-raising flour and beat for 3 minutes. Before filling with mixture, draw a bunny face on each muffin case with a black marker. Place mixture into baking cups and bake on a flat tray at 160oC/320F until golden brown, approximately 15-20 minutes. Place on a cooling tray once baked.
Whilst the cupcakes are baking, melt the white chocolate over a bowl of simmering hot water. Remove from the heat and allow to cool slightly. Place in a piping bag with small narrow piping nozzle. Using the bunny ear template, place tracing paper over the sheet and trace the bunny ears to fill in with chocolate. Place in the fridge for 15 minutes to harden. Decorate the cupcakes with icing and insert the bunny ears before serving.
