Creating bite size eats for your event can be sometimes more daunting when you think of how many dishes you will need to happily feed your guests. It’s all a matter of preparation and a few, not too many, great recipes that will have you looking like you professionally catered the entire party! Try our version of Fig & Blue Cheese Tarts as a starter to your six item menu. Not only are they simple to make, but they are vegetarian and can be prepared ahead of time, ready to bake before serving.
1 x roll store-bought short crust pastry
1 x 200g blue cheese or gorgonzola
4 x medium ripe figs
1 x bunch of watercress
1 tbsp olive oil for dressing
Pinch of salt & pepper to taste
Makes at least 24 tarts or more depending on the shape and size of the pastry cut-outs.
After lining a tray with baking paper, use a cookie cutter of your choice to cut the short crust pastry into individual pieces. Lightly prick bases with a fork before spreading some cheese on each tart. Top with a few leaves of watercress. Make sure you cover the pastry when you are not using it, to prevent it from drying out. Work on one tray at a time.
Wash the figs well and chop into thin pieces. Add a small amount centred on top of the watercress leaves. Keep in mind some people prefer to peel the skin off figs before cooking however it’s a personal choice and dependant on the quality of the figs.
Mix the olive oil, salt and pepper together. Drizzle a little oil over the tarts, making sure not to over coat them.
Bake in a preheated oven at 360F for 10-12 mins or until lightly brown on the edges. Garnish with some extra watercress leaves for a beautiful presentation. They are now ready to be devoured by your guests!
